Menu for week of Aug 8th

Breakfast: (all with fruit or smoothie)
1. bagels/cream cheese
2. fried egg and toast
3. breakfast burritos
4. cream of wheat and toast
5. oatmeal
6. pancakes

Dinner:
1. Hawaiian Haystacks (roll over from last week)
2. Spaghetti and meatballs (roll over)
3. Beef stew and corn bread (roll over)
4. Costco tamales w/ lentils and corn (idea from http://probertrecipes.blogspot.com/ :))  
5. Tikki Masala w/ rice and Naan
6. Vegetable stir fry w/rice

Holli's Favorite Tortellini Soup

1 medium onion, chopped
2 zucchini(small), diced
carrots(medium), diced
2 summer squash(small), diced
6 c chicken stock
1/2 tsp+ dried basil
1 bay leaf
parsley
1/2 c canned crushed tomatoes
1/2 tsp salt + more to taste
black pepper
1 20 oz pkg tortellini
optional: Italian sausage
Heat oil. Add onion and saute.
Add veggies and saute.
Add chicken stock, tomatoes, spices.
simmer.
Add tortellini when veggies are soft. 

Add ANY veggie you want to this recipe. Whatever you have on hand.

Aunt Maureen's German Pancakes

Preheat oven to 350 degrees.
Melt 6 TB of butter in a 9 x 13 glass baking pan. (Let it melt while oven preheats but watch it so it doesn't burn!)

Combine the following in a blender:
6 eggs
1 c. flour
1/4 tsp salt
1 c. milk

Pour over melted butter in pan and bake for 20-25 mins. It will puff up and brown and it bakes.
Serve with syrup, powdered sugar, and a little squeeze of lemon.

Dinner:
2. beef stew, corn bread
3. Hawaiian haystacks
(I use my immersion blender when done simmering so its not too chunky of a sauce)
5. Soft shell tacos, salsa

1. homemade egg mcmuffins w/ avacado and tomato and smoothie
2. cream of wheat, toast, and pears
3. pancakes and peaches
4. oatmeal, scrambled eggs, and blueberries
5. ham and cheese breakfast muffins* and smoothie

Snacks:
1. salsa and chips
2. hummus and chips
3. zucchini bread

Lunch:
1. PB&J, broccoli/ranch, and watermelon
2. cucumber roll-ups*(with hummus, turkey, cheese) and grapes
3. egg salad sandwich, cucumber and carrot sticks, and fruit
4. supreme pita pizza, zucchini sticks, and fruit
5. cauliflower soup*, crackers/toast, and fruit 

Dinner:
1. eggplant parmesan*, angel hair pasta, and green beans
2. white chicken enchilada casserole, corn
3. chicken cordon blue casserole, summer squash
4. parmesan chicken, steamed broccoli, garlic bread 
5. copy cat PF Chang's lettuce wraps*
